Blondies Butterscotch Brownies

1 pound white chocolate chips
6 tablespoons butter
3 extra large eggs
3/4 cup light brown sugar (firmly packed)
1 1/2 cups flour
1 1/2 cups walnuts, roughly chopped
6 ounces butterscotch chips
1 teaspoon vanilla

Preheat oven to 325 degrees.

Butter and sugar a 7 X 11 inch pan.

Mix the white chocolate chips and butter in a bowl and then set it over a pot of lightly boiling water, creating a double boiler. Stir continuously until it’s completely melted. Remove and let cool.

Put the eggs and brown sugar into a large bowl and whisk well until its nice and light. Gently fold in the melted chocolate mixture and incorporate till just blended.

Sift in the flour and gently fold it in with the walnuts, butterscotch chips and vanilla, again until just blended. Be careful not to over mix.

Spread the batter onto the baking dish and cook for about 30 minutes, or until batter has set and it’s golden brown. The center should be slightly firm to the touch. Makes 2 dozen.

NOTE: The first time making these, check the blondies at the half way point to see if the top is getting too brown. If so, cover loosely with foil and continue baking until done. Depending on size of pan and amount of batter, it could take up to 45-50 minutes to bake.
